Easy Enchiladas
I don't often post recipes on my blog because I would consider myself more of a copy cat cook than a connoisseur of creative cuisine. However when I do come up with a concoction of my own that is tasty enough to share then share I must.
Easy Enchiladas
Ingredients:
1 lb of ground beef
1 can of navy beans
1 can of refried beans
1 package of burrito seasoning
10 soft tortillas
Grated cheddar and mozzarella cheese (to your taste)
Sauce:
1 large can of tomato sauce
1 Tbsp of cocoa
1/2 tsp of chili powder
1 tsp cumin
1Tbsp of brown sugar
1 can of green chilies
Directions:
Brown the ground beef. Once cooked add both cans of beans and burrito seasoning. Continue cooking on low until the beans are warmed.
Combine all of the sauce ingredients in a sauce pan and bring to a low boil. Stir often.
Spoon the beef and been mixture onto a tortilla near an edge.
Roll the tortilla, tucking the edges as you go.
Spoon some sauce over the bottom of a 9x13 glass baking pan.
Place folded tortillas in the pan.
Top with remaining sauce and grated cheddar and mozzarella cheese.
Bake covered at 350F for 30 minutes.
Unfortunately I forgot to take an end result picture before we scarfed this down. So just imagine the saucy tortillas and gooey cheese. We topped these with salsa, sour cream and guacamole
This is also a great make ahead or freezer meal.

We live in Texas so I feel I am a sort of Mexican food expert and I have to say those look and sound very yummy! I've never tried putting cocoa in my sauce, but that would make it like that tasty Mole' sauce!
I'd like to try these. I'd feel all adventurous putting cocoa in the sauce!
